  • 4 boneless, skinless chicken breasts
  • 2 cups low-sodium chicken broth
  • 1 (12 oz) package stuffing mix (cornbread or your favorite flavor)
  • 1 medium onion, finely chopped
  • 2 stalks celery, diced
  • 3 tbsp butter
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C) and lightly spray a baking dish with nonstick cooking spray.
  2. In a skillet over medium heat, melt butter. Sauté chopped onions and celery until soft, about 5 minutes.
