  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 4 cups low-sodium vegetable or chicken broth
  • 1 cup coconut milk
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg

Instructions

  1. Peel and cube the butternut squash. Chop the onion and mince the garlic.
  2. Place the butternut squash, chopped onion, and minced garlic into your crockpot. Pour in the broth until everything is just covered.
  3. Add cinnamon and nutmeg; stir to combine all ingredients well.

  5. Blend the mixture until smooth using an immersion blender or regular blender, adjusting consistency as desired.
