  • 1 cup canned pumpkin puree (not pie filling)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. In a skillet over medium heat, brown the ground meat until no longer pink. Drain excess grease and transfer to the crockpot.
  2. Sauté chopped onions and minced garlic in the same skillet until fragrant (about 3 minutes), then add them to the crockpot.
  3. Stir in pumpkin puree, beans, diced tomatoes with juices, chili powder, cumin, salt, and pepper until well combined.
  4. Cover the crockpot and cook on low for 6 hours or high for 3 hours.
  5. Taste halfway through cooking and adjust seasonings if necessary.
