- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 medium butternut squash (about 2 lbs)
- 2 tbsp extra virgin olive oil
- 3 cloves fresh garlic, minced
- 2 tbsp honey
- Salt and pepper to taste
- 1 tsp fresh thyme leaves
Instructions
- Preheat oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
- Cut butternut squash in half lengthwise, scoop out seeds, and drizzle with olive oil, salt, and pepper. Place cut-side down on a baking sheet and roast for 25-30 minutes until tender.
- While the squash roasts, season chicken breasts with garlic, thyme, salt, and pepper. Heat olive oil in a pan over medium heat and cook chicken for about 6 minutes per side until golden brown and cooked through.
- Shred the cooked chicken and mix in honey in a bowl.
- Flip roasted squash halves right-side up and fill generously with the chicken mixture. Return to the oven for an additional 10 minutes.
- Serve warm, drizzling extra honey if desired.
